I made this for dessert the other night. Cake top was light and fluffy. Served it with whipped topping. Very good!

We had this for breakfast with organic unhomoginised yogurt! It was good, not too sweet. I cheated by using what I had on hand which was a gluten, corn, soy free pancake mix for the flour, organic Fuji and Gala apples, organic coconut sugar, clarified organic sea salted butter, organic, free range egg, more yogurt mixed with water instead of milk. DD1 (5 years old) says can we make a cake bottom now because the top was good. Made for Aussie Swap.

WOW! This is great and fast!
I heated the apples in the microwafe. In the meanwhile I prepared the cake top and then direcltly in the oven.
Fast, not too sweet and super yummy!
The new, great and big tip for me were the cloves! I never used them in this way and I can say that this fits perfect with apples. My DD said this is a genial recipe.
We had this without ice cream or curd it tastes already perfect and I did not want to add more calories to the meal.
We had this last night, we all enjoyed it, my daughter had seconds...It was very quick and easy to do, the kids helped me make it,it was very light and fluffy, I only used the topping as I had some apple pie filling I had to use up. We served it with whipped cream. Will be making it again. Thanks

Jan - I only used the topping recipe...I hope you don't mind. I have a freezer filled with berries and wanted a nice dessert to finish off a special birthday dinner so this recipe fitted the bill. I used about 1kg of berries (blueberries, blackberries, boysenberries, strawberries and rasperries)which I heated in 1/2 cup of sugar syrup. I made your cake top as per the recipe (I wish I doubled it) and cooked for about 30 minutes. Very yummy and something I'll make again due to the lightness of the cake and the simplicity of the recipe. Thanks so much!!

Used this for dessert the other night-really good. Only change was that I used cinnamon and nutmeg in place of the cloves, DH just not a fan of cloves. Served it warm with vanilla ice cream-yummy! Your mom did good-thank you for posting this.
