  • Divide shredded fresh mint among the compartments of an ice cube tray, and fill with water. Freeze until solid.
  • Steep peppermint teabags with the boiling water for 10 minutes, then remove the teabags and chill tea until cold.
  • Combine apple juice with the chilled peppermint tea and fresh lime juice.
  • To serve, fill glasses with mint ice cubes and chopped apple, topping with peppermint tea.
