  • 591.47 ml cream
  • 118.29 ml tasty cheese (cheddar, I assume?)
  • 1 small onion, grated
  • 1 garlic clove, finely chopped
  • 14.79 ml nam pla (fish sauce)
  • 14.79 ml tomato paste
  • 453.59 g fish fillet (Australian mackeral, barramundi, tuna, salmon, or coral trout)

directions

  • Make sauce by combining all ingredients (except fish fillets) in saucepan over medium heat until cheese is melted.
  • Place fish fillets into baking dish (one that can go directly onto the table works well). Spoon the sauce onto the fillets.
  • Bake at 425 - 450 degrees for 10-15 minutes (for thick fillets), or under the griller (for thin fillets) until cooked and top is browned. Fish should flake easily with a fork; on the other hand, it shouldn't look dried out either. Alternatively, you can also reduce the sauce in a frypan on a medium to hot heat on top of the stove. Turn heat down to medium and then cook the fillets in the sauce.

  1. Yum! We used fresh dolphin which was cooked to perfection in 10 minutes. For a thinner fish like snapper I'd probably reduce the oven temperature. This makes lots of sauce - maybe enough for 5 pounds of fish.
     
  2. Perfection for a Spring nite. This is as beautiful a dish as it is to devour. You could serve this for so many things. At a shower, (cut in smaller pieces, with that beautiful sauce over/top) for a wonderful dinner presentation, a brunch, anything, anytime! I followed this exactly, except used fresh chives instead of the grated onion. The colors of the sauce were so pretty! I used tilapia, and some mild cheddar cheese in the sauce. Very, very easy to prepare and I broiled the fish and it was perfect and flaked wonderfully! Made for your win, *ZWT Six* "Zee Zanies Cookz" May 2010
     
  3. I used fresh tuna for the fish, and used cream cheese and Extra sharp Cheddar for the cheese. It was a delightful combination and blended really well with the fish. This will be made again!
     
  4. This is really simple, delicious, and unusual. I used a cheddar cheese as suggested. I loved how all these flavors came together with the salmon fillet. This made a lot of sauce and I did try the reduction method. I think next time I will only use a 1 to 1 1/2 cups cream. Thanks, Debbie R.! Made for ZWT5.
     
  5. I really enjoyed this! Loved the sauce! For my 1/2 cup of cheese I used cheddar and I also added 4 oz of cream cheese. It had a nice flavor and was definitely creamy. For my fish I used salmon (my fav). The leftovers from this are really good kind of chopped and put over toast or hot biscuits... YUM! I just love this recipe. Thanks Debbie! :)
