      Cream the butter; add the sugar and beat until light and fluffy.

      Dissolve the baking soda in the water and add, stirring well.

      Add the oatmeal and ginger, mixing well. The mixture should be fairly firm. If necessary, add a little more oatmeal.

      Knead lightly on a floured surface.
    5. 5
      Preheat oven to 300 degrees.

      Press the mixture in a buttered baking dish, about 8 x 12 inches. The dough should be about 1/2 inch thick.

      Bake in the 300 degree oven for 35 minutes, or until brown on top.

      Cut into squares while hot.

      I always enjoy making recipes like this ~ Don't know exactly what to expect, but hope for the best ~ & most often they are very nice! These thingies are just unusual enough for me to serve at one of the monthly groups I host (this evening) & I'm sure they'll be a hit ~ They certainly are with the 2 of us!       Yummy! This tastes and has a texture somewhere between an oatmeal cookie and a granola bar. I did not knead it on a floured surface but instead kneaded it in the bowl. The dough was very crumbly and the kneading involved more of working the wet ingredients into the dry until they stuck together enough to be formed into the pan. I baked it in a greased pie pan for the full time indicated and cut it into wedges. Thanks Mand1642 for a nice treat! Made for ZWT5.
