Baklava-Inspired Ice-Cream

- 500 ml cream
- 1 vanilla bean
- 4 egg yolks
- 100 ml honey
- 1 cup toasted walnuts, chopped
- 1 tablespoon cinnamon
- 1 tablespoon white sugar
directions
- Method.
- Split the vanilla bean and scrape the seeds into the cream.
- Add the scraped bean to the cream and heat until it just begins to simmer and then remove from the heat.
- In a bowl that fits into a medium-sized saucepan, whisk the egg yolks until they are light and fluffy.
- Pour the hot cream over them while continuing to whisk.
- Add the honey and place the bowl over a saucepan of just simmering water until the mixture thickens enough to coat the back of a spoon.
- Churn in an ice cream machine until firm then place in the freezer.*.
- Mix the walnuts, cinnamon and sugar and spread on to a plate.
- To serve, roll scoops of the ice cream in the nuts until they are well coated.
- Drizzle with extra honey to taste.
