  • Method.
  • Split the vanilla bean and scrape the seeds into the cream.
  • Add the scraped bean to the cream and heat until it just begins to simmer and then remove from the heat.
  • In a bowl that fits into a medium-sized saucepan, whisk the egg yolks until they are light and fluffy.
  • Pour the hot cream over them while continuing to whisk.
  • Add the honey and place the bowl over a saucepan of just simmering water until the mixture thickens enough to coat the back of a spoon.
  • Churn in an ice cream machine until firm then place in the freezer.*.
  • Mix the walnuts, cinnamon and sugar and spread on to a plate.
  • To serve, roll scoops of the ice cream in the nuts until they are well coated.
  • Drizzle with extra honey to taste.
