- 59.16 ml butter
- 59.16 ml brown sugar
- 1 egg
- 118.29 ml self raising flour
- 14.79 ml milk
- 14.78 ml cocoa
- 14.79 ml hot water
- 59.14 ml vanilla essence
directions
- Grease 5 personal sized ramekins (the little ones).
- Cream the butter and sugar together, then beat in the egg and fold in the flour and milk, mixing well.
- Spoon 1 tablespoon of the mixture into each ramekin and add the cocoa, vanilla (yes, 1/4 CUP of vanilla) and hot water to the remaining mixture.
- Top up each ramekin and swirl the two mixtures together with a spoon.
- Place around the edge of a microwave carousel and microwave on MEDIUM for 4-6 minutes. Careful! The ramekins are HOT.
- Allow to stand 1-2 minutes prior to serving.
- Turn over onto a plate. They should drop out with a little bit of tapping.

These puddings were so easy to make and they are made with standard pantry ingredients, making this a really useful recipe to have in your repertoire for occasions when you want to whip up a tasty little pudding. I halved the recipe, and made just two puddings as I was not going to be serving it to anyone else. I would for that reason have rather liked to have quartered it but halving an egg is hard enough (!), so I ate one while it was warm, and shall eat the other one tomorrow or the next day at room temperature. A delicious blend of flavours, and a lovely texture, and the puddings look very presentable: certainly suitable for serving to guests (no way do they look as if they were so quick to make!), but you might want to make the recipe once first, to check out your microwave’s heat levels as these can be so variable.
