Cherry-Ripe Chocolate Slice

  • 500 g chocolate, Eating (Cadbury's is the nicest)
  • 5 ounces Copha
  • 12 lb desiccated coconut
  • 14 ounces condensed milk, Nestle (Approx. 400g net, I think)
  • 1 (100 g) packet cherries, fresh cherries could be used
  • red food coloring

directions

  • Melt half the chocolate (using steam - a microwave will burn it!) and press into a slice tray that is layered with aluminium foil.
  • Refrigerate this till set.
  • Combine coconut, cherries, melted copha and condensed milk into a semi-solid sticky mess.
  • Add drops of food coloring till the mixture is pinkish.
  • Press this on top of the chocolate, pressing into the corners and flattening out using a cold spoon.
  • Refrigerate till set.
  • Melt the rest of the chocolate and cover the mixture, then refrigerate again till chocolate hard.
  • Remove the slice, foil and all, from the tray.
  • Remove the foil and cut into small squares.
  • Make sure you get all of the foil or your teeth will feel it!
  • Keep refrigerated.

I am no longer single. I found me an amazing man and we married, it has been almost 3 years now. My little girl is 13 now and she is amazing. I went to school and got my Bachelor's Degree in Criminal Justice and I work for the State as a Parole Officer now. I have realized that I hate cooking. I really do hate it. Luckily I married a man who loves to cook. He hates to bake, and I actually do like to bake. So I am what one would consider a somewhat mediocre baker. I still think about my Zaar Angel all the time. She knows who she is. I do enjoy to crochet, I do that a lot here lately. I use to do counted cross stitch, yet I don't do that anymore. I can't watch TV as well as I can while I crochet.
