Chicken, Cheese, and Avocado on Rye

"I made this tonight to use up some stuff from the fridge, and everyone loved it! The measurements are approximate, just add amounts to suit your own tastes :)"

  • 4 slice rye bread, lightly toasted
  • 59.16 ml pasta sauce, tomato
  • 236.59 ml cheddar cheese, shredded
  • 236.59 ml cooked chicken, chopped
  • 1 avocado, sliced
  • salt, pepper

directions

  • Divide sauce by 4, and spread over toast.
  • Sprinkle a little cheese on each slice, to hold the toppings in place.
  • Divide chicken between slices of toast.
  • Top with avocado. Sprinkle with salt and pepper.
  • Top with remaining shredded cheese, and place under the grill until cheese is melted and bubbling.
  • Cut into fingers, and serve hot.

I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol
