This is one of my favourite easy, peasy, quick to throw together dinners that make often always using ORGANIC/FREE RANGE ingredients (you don't have too of course)

  • 2 cups rice
  • 6 chicken thighs (bone and skin on)
  • 2 (420 g) cans soup, of your choice
  • 12 cup celery
  • 1 onion, chopped
  • 1 (40 g) packet French onion soup


  1. Place rice into casserole dish, place chicken on top, add vegetables, combine french onion soups with tinned soup and pour over the chicken and rice with 2 cans water.
  2. Bake uncovered 2 hours.

Really good even with my changes based on what I had on hand! Instead of canned soup, which I didn't have, I used 1 can of chicken broth and also added some carrots. Delish and easy! Thanks for sharing!
