Chicken (Pollo) Famiglia

Another one from a Leggo's cookbook I want to try.

• Total Time: 1 hrs 20 mins
• Prep Time: 10 mins
• Cook Time: 1 hrs 10 mins

Ingredients:

Servings: 4

• 2 slices bacon , chopped
• 1 onion , chopped
• 1 carrot , chopped
• 1 stalk celery , chopped
• 3 tablespoons oil
• 8 chicken drumsticks
• 2 cups water
• 2 chicken stock cubes
• 240 g tomato paste
• 2 -3 fresh rosemary sprigs or 2 teaspoons dried rosemary
• 2 cups frozen broad beans
• salt & pepper

Directions:

1. Heat 1 tblsp of the oil and saute the bacon & chopped vegetables for approx 5 mins, spoon into a large pot.
2. Add the remaining oil to the pan & lightly brown the drumsticks, then add these to the pot, stir in remaining ingredients.
3. Bring to the Boil, cover & simmer for 1 hour.
