Creamy Tuna Stuffed Spuds (Potatoes)

- 8 potatoes (large)
- 425 g mornay sauce (cabonara was specified)
- 425 g tuna (canned in water)
- 2 spring onions (scallions chopped)
- 1⁄2 cup cheese (grated)
directions
- Preheat oven to 180C (160C fan forced).
- Wrap each potato in aluminium foil and put on a shallow tray and put in the oven and cook for 1 hour or until tender.
- Heat carbonara sauce in a small saucepan until simmering.
- Drain the tuna and flake and add to the carbonara sauce and then add the spring onions.
- Make a cross in the cooked potatoes and carefully push open.
- Spoon in the tuna sauce and then sprinkle with cheese.
- Put potatoes on a tray and bake for a further 10 minutes or until cheese is bubbly.
- If you have sauce left over serve in a jug for people to pour over as they make their way through the potato.

I imagine if using a bottled sauce that they would be a total zinch to make. Loved the tuna topping. photos also being posted.

These were so easy and so yummy!!! I loved the tuna filling and serving the rest of it on the side was spot on, as we poured all of it over our potatoes. I made my mornay sauce from scratch and added some gruyere cheese to the sauce as well as sprinkling some over the potatoes. A great combo Pat and it makes for a very delicious meal with minimal effort and maximum taste.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
