- 44.37 ml plain flour
- 4.92 ml salt
- 1 kg lean pork, cubed (2 1/4 lb)
- 29.58 ml oil
- 1 onion, large finely chopped
- 14.79 ml curry powder
- 14.79 ml paprika
- 295.73 ml chicken stock
- 2 dried red chilies (to taste)
- 14.79 ml mango chutney
- 4.92 ml Worcestershire sauce
- 400 g can pineapple chunks in syrup
- 2 bay leaves
directions
- Mix flour and salt together and toss pork pieces in mixture until coated.
- Heat oil in frying pan (skillet) and brown meat on all sides.
- Transfer to crock pot.
- Add onion to pan and saute until transparent.
- Add all remaining ingredients to pan and bring to boil.
- Transfer to crock pot.
- Cook on low for 5- 8 hours (depending on your crock pot) until tender.
- Discard bay leaves and stir well.
- Serve with rice.

This is such a wonderful combination of ingredients and a very versatile recipe. I had to adapt it for the oven as I don't have a crockpot -- I baked it for about 2 hours on a medium heat (150 C), covered. I then uncovered it for about 15 minutes. I also used fresh pineapple. It came out perfectly and the meat was very tender.

When I made this meal, I used my Breville Express Cooker (an electric pressure cooker), so it took about half an hour to actually cook. I like it as there is little to prepare beforehand. It was very tasty, although I think I overdid the curry/paprika a little. It was quite hot & spicy, even for us, and we don't mind hot & spicy! Otherwise, delicious & very tender. Kids liked it, too.
