Crumpets With Cheese & Bacon

Nice way to enjoy English crumpets. If you're from a country where they're not widely available do yourself a favour and make some from scratch, there are plenty of recipes on RecipeZaar for them. This recipe really works a lot better using natural cheese rather than processed cheese.

• Prep Time: 10 mins
• Cook Time: 10 mins

Ingredients:

Servings: 4

• 4 crumpets
• 1/4 cup cheddar cheese, grated
• 50 g bacon (one large slice or rasher)
• 1/4 teaspoon ground pepper (optional)
• 1/4 teaspoon ground paprika (optional)

Directions:

1. Lightly cook bacon in a non-stick frying pan and set aside.
2. Sprinkle cheese evenly over each crumpet followed by pepper and paprika if you are using them.
3. Tear up bacon and place over the top, discarding fat and the rind etc.
4. Grill for around 5-10 minutes until the cheese has melted into the crumpet.

Made for a late breakfast so made 2 crumpets for me. Baked 50 grams (2 small rashers) of rindless bacon in the oven. Lightly toasted the crumpets and used some grated vintage cheddar (would easily have used the 1/4 cup over the 2 crumpets) - did mention it was a late breakfast and I was hungry. Used the paprika - after all melting grated cheese without paprika and pepper seems mandatory. Popped it all under the grill and when melted and bubbly I hoed in and thoroughly enjoyed.
