Curried Chicken and Broccoli Sauce for Pasta

I made this for dinner tonight with what I had on hand in the fridge and pantry. I thought it was pretty good!

  1. Cook the onion and garlic in the oil until softened.
  2. Add the curry powder and fry for about 1 minute.
  3. Add the chicken and cook until all the chicken changes colour.
  4. Add the capsicum and cook for a couple of minutes.
  5. Add the tomato sauce, coconut milk, stock, zest and cook for about 5 minutes.
  6. Stir in the broccoli and onions and and heat through gently.
  7. Taste for seasonings.
  8. Serve at once over the cooked pasta of your choice.

This recipe is fantastic because it is hassle-free and SO tasty. I added some fresh corriander and mint purely because it was in my fridge. I had never put lemon zest in a curry, but will be from now on! Perfect for an Aussie summer evening when you don't want to spend hours cooking. Thanks for that Jan!!
