Healthy Tossed Salad

We had this for tea last night which is why I could get a photo of it. I love tossed salads and this one would be one of my favourite. Healthy and yummy. What more could you want?

Ingredients:

Servings: 4

• 4 leaves lettuce
• 3 mushrooms , sliced thinly
• 1 tomato , sliced
• 2 slices cheese , cubed (sliced off of the block)
• ½ red capsicum , sliced (red bell peppers)
• ¼ English cucumber , sliced
• 1 spring onion , cut into small pieces
• herbs
• mixed Italian herbs
• light Italian dressing
• pepper
• salt

Directions:

1. Place the lettuce in the bottom of a deep bowl.
2. Place the italian herbs on the lettuce.
3. Add the mushrooms, cheese, spring onions and capsicum.
4. Then add the cucumber and place some salt on the cucumber.
5. Add the tomato and place some salt and pepper on the tomato.
6. Sprinkle salad herbs on top of the tomato.
7. Dress with Italian light dressing.

Delicious salad. I added some mandarin oranges, well-drained, for variation.
