Herbed Potatoes

ingredients
- 90 g butter
- 8 -10 medium new potatoes, scrubbed & thickly sliced
- 3 small onions, thinly sliced
- 1 garlic clove, crushed
- 2 tablespoons flour
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 cup chicken stock
- 1⁄2 cup white wine
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
directions
- Heat butter in a large pan, add potatoes & onions and saute turning frequently until slightly browned.
- Add garlic, flour, salt & pepper and continue frying turning constantly for another minute.
- Pour combined stock & wine over potatoes and sprinkle with thyme. Simmer, tightly covered until liquid is absorbed and potatoes tender.
- Sprinkle with parsley & toss lightly just before serving.

I scaled this back as a serving for 2 and used 1 medium onion and 6 chat potatoes (which I quartered) and followed through though like Jan I did not add the flour (I really feared it burning and would ruin the dish). As was we loved it, I used fresh lemon time from the garden (just left the leaves whole as they are so tiny) but had no parsley so that was omitted. A great recipe, thank you **Mandy**, made for Make My Recipe - Edition 11.

Mandy, this is amazingly good and simple and will be getting made again really soon. I forgot the flour, but it really didn't matter as the liquid evaporated and the potatoes were as melt in the mouth tender to eat. I wouldn't use it (flour) in future in case I ruined a perfect dish (less chance of the potatoes catching to without it I reckon).

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa.
Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks.
As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
