Jelly Crystal Biscuits (Cookies)

"I found this suggested on a New Zealand recipe forum when I was searching for recipes to use up some jelly crystals. My girls had a lot of fun making their *blue* biscuits and now have plans to make *green* ones!!! Great for a rainy school holiday day."

  • Preheat oven to 180°C.
  • Cream the butter, jelly crystals and sugar together in a mixer.
  • Add egg and beat well.
  • Add the sifted flour and baking powder and mix until well combined.
  • Place in teaspoonful sizes on a oven tray. Flatten slightly with a fork.
  • Bake for approximately 10-12 minutes.

  1. First things first, we doubted these cookies from the start. The picture is widely unappealing and who would ever think that putting jelly crystals in biscuits is a good idea? From the go get the batter smelled and tasted diisgusting. Like mouldy yoghurt muesli bars. We used strawberry crystals which should have worked fine (considering other users used pineapple which is gross) and yet I want to vomit. We chose to only use half the recommended amount of crystals when we should have used NONE. In fact I just burped and it was revolting. Coming out of the oven these looked like deformed marshmallows which is not what I am after in my cookies! WARNING: DO NOT MAKE THESE COOKIES! In fact we made them for our friend for Valentine’s Day but they aren’t good enough for her and we certainly don’t want them. So thanks for wrecking Valentine’s Day!
     
  2. Uber easy biscuit and really tasty. Think next time I wont use fan bake because they were a bit too crisp and a little brown. Will be trying again for sure!
     
  3. Good biscuit, easy to make. Used pineapple and orange jelly because I didn't have two matching jellies. Liked how they were slightly chewy, just slightly on the day of making. Will try again. Thank you for sharing.

  5. Wow, these are really simple & tasty. I wanted green in honour of St Pat's Day but found I was one pkt short of lime jelly, so I used one pkt lemon, 1 pkt lime & added a few drops of food colouring to boost the green colour. The kids thought these were great & so did the mums!! Beware though, it's hard to stop at one!! LOL..
