      Combine the garlic, chilli, mint, lemon rind, oil and lemon juice in a medium bowl.

      Add prawns and stir to coat. Place in fridge to marinade for 10 minutes.

      Thread prawns onto skewers. Season. Heat grill to high.
    4. 4
      Spray skewers with oil.
    5. 5
      Cook for 2-3 minutes each side or until golden brown.

      Top with mint. Serve with mayonnaise and lemon wedges.

      Mummamills, I hope you've tried these by now because they are awesome!! DH and I so enjoyed this taste of summer in the depths of a wet and cold NZ winter. A quick and easy taste treat. Made for Aussie / Kiwi Swap July 2012.

      Great combination of flavors. Loved the touch of mint. It was iffy weather-wise today so I did these on a stovetop grill pan and that worked great. Will be making these again!
