Kumara Burger ( Sweet Potato )

"This is something I made up to eat on burger night, as a vegetarian alternative to beef. I feel the sweet potatoes with the purple skin are best, but any will be fine. Hope you enjoy!"

  • Preheat oven to 200°C; then on a roasting tray, spray lightly with oil or pour around 3 tablespoons of oil somewhere in the middle.
  • On the up side of the Kumara slice, add any cinnamon, brown sugar and any other condiments you like (salt etc). Roast until soft with darkish edges.
  • Toast your buns now if you want them toasted, then add your salad items on the bun. When you take the kumara out of the oven, you may want to put it on a paper towel to absorb some oil, just make sure it's a good one that's not going to break or leave fibers on your food.
  • Serve whilst hot and enjoy!

  1. Definitely a different kind of burger, & for me it was GREAT, since I'm extremely partial to yams, & this is certainly an interesting way to serve them! Was going to omit the sprouts, then decided to go all the way with these, & they added a nice 'something' to the sandwich! I did include the cinnamon & brown sugar, by the way, & from my point of view they shouldn't be optional! Thanks for posting!
