My mum used to make this for me when I was a kid. She would use lemons, oranges or a mix of both, but I prefer just lemons. The recipe suggests 1 cup of the syrup to 2 or 3 cups of water or ginger ale, but I think you need to mix it to your liking.
- Put sugar and water in saucepan, heat enough to dissolve the sugar.
- Pour over shredded rind and allow to cool.
- Strain and add juice.
- Dilute to taste.

Such a refreshing home-made drink that is great for the weekend! I didn't quite have enough lemon juice so I did use an orange and some of that bottled lemon juice to top it up to the full cup required. Once diluted to our tastes, it went down a treat (though my DH took a swig before I had diluted it - his face was precious!).I even put star shaped ice cubes in with it :) I really enjoyed making this, it was my first attempt at a beverage recipe, and I am very pleased with the outcome!
