  • Finely grate zest of the lime then squeeze the juice out.
  • Chop the coriander.
  • Boil the chicken stock and lime jiuce together.
  • Add couscous to stock.
  • Allow to sit 5 minutes then fluff with a fork.
  • Add zest and coriander and mix to combine.
  • Good hot or cold.

  2. We love couscous and I'm a real fan of having a selection of salads ready to go in the fridge. Good taste but I thought overall the mixture was a little dry. I can imagine a little lime vinaigrette stirred through would really bring this salad to life. Made for Aussie / Kiwi Swap October 2012.
