    This is my absolute favourite sandwich, and is how I always use up the leftovers if we have cray! I Perfectly Simple Seafood Dipping Sauce for the sauce.

    Directions:

      Butter both slices of bread.

      On the unbuttered side of one slice, assemble crayfish and sauce.

      Top with the other slice, and grill in a sandwich press until golden brown.
