This is my absolute favourite sandwich, and is how I always use up the leftovers if we have cray! I Perfectly Simple Seafood Dipping Sauce for the sauce.
- 2 slices bread
- 2 teaspoons butter
- 1 cup crayfish
- 2 tablespoons seafood sauce, Perfectly Simple Seafood Dipping Sauce
- Butter both slices of bread.
- On the unbuttered side of one slice, assemble crayfish and sauce.
- Top with the other slice, and grill in a sandwich press until golden brown.
