I upped the amount of everything making 5 split breasts, in hopes of having one left over to top salads with tomorrow. No such luck...the kids ate every bit of it at lunch. A kid pleaser and simple to make equals a win, win recipe! Thank you for sharing Mandy, I will definitely be making this again. Maid and reviewed for the Make My Recipe Tag Game #14.
Very good. I think for newbie's you may have wanted to add guesstimated poaching times....but mine turned out lightly flavored of lemon. I added 6 cloves of garlic and didn't get much of a garlic taste. Will add more next time. I liked the moistness of the poaching method. Will use again.

Loved it! Nice and lean, full of citrus flavor. Might add a bit more garlic too next time. I can't wait to try a sandwich with the leftovers tomorrow! Made for the ZWT4 for team TTT
I cooked 3 skinless breasts, got about 2/3rd's cup of juice from them, crushed 3 small cloves of garlic and quartered 1 lemon and used nearly 2 cups water. Poached for 6 minutes (timed form reaching simmering point) in uncovered frypan/skillet, turned off heat put lid on and left while I mashed potatoe and served up vegetables. Also instead of oregano I used fresh sprigs of lemon thyme. The lemon taste was just there and made for a delightful dinner for the DS, DM and myself. Made for Edition 4 - Make My Recipe - a game of tag.
Ooooh i really enjoyed this chicken! it was very light and tasteful! i will for sure be making this again!!! i may add a couple extra cloves of garlic.... but i LOVED the lemon flavor in the chicken!!
