Potato Bake

"I've had this recipe since I was a teen, not sure where it came from as I've handwritten it in an exercise book. This is a little different to a normal potato casserole given that the potatoes are grated."

  • Drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.
  • Beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.
  • Pour into a well greased casserole dish and bake at 200.C for approx 10 minutes.
  • reduce heat to 180.C and cook for a further 30 mins or until golden & set.

  1. Mandy - this is a nice change of pace to the normal potato side dish. I did *cheat* a bit and used pre-packaged grated potatoes which makes this so easy to make! It did take the full 40 minutes to bake which allowed me to prepare other sides and the meat rest. I used a lot of pepper in the egg mix and at the last 5 minutes topped with a bit of shredded cheddar cheese. It was well received by the family. Glad I tagged you in 123 Hits!!
     
  2. Good and Easy. We enjoyed this a lot with fresh fish. I'm going to try it with self raising flour next time to give it a bit of a lift.
     
  3. This is an easy dish to prepare...as long as you don't grate the potatoes by hand. :) I used recipe #223907 in the preparation instead of plain butter. I baked it in a 8" round casserole dish, which may have been too small for the amount of mixture I had. I cooked it for about 20 minutes longer than specified. Possibly my potatoes were larger, which would certainly affect the cooking time. I will try it again in a larger, shallower dish. Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
