ingredients
- 40 pitted prunes
- 473.18 ml port wine (I use cask Old Port)
- 473.18 ml red wine (I use a lambrusco type)
- 1 vanilla bean
- 236.59 ml sugar
directions
- soak prunes in the port overnight.
- next morning combine everything and simmer for about 30 minutes, stirring occasionaly.
- take out vanilla bean. (You can wash it and use it again).
- bottle, or store in the fridge.

Superb......I make a version of these myself with Armagnac brandy, so I knew I would like them with port and wine as a change! I made half the amount for an elegant dessert for my husband and I; we ate these "au natural", with all the boozy juices poured all over them! I suspect that they would also be good with a dollop of creme fraiche or ice-cream too. Made for Aussie/NZ recipe Swap #9. Thanks! FT:-)

5 stars! This is seriously yummy! and sooo easy, it's ridiculous. DH hates prunes and for once instead of thinking Darn why won't he at least try them to see if he likes it? I instead thought: EXCELLENT, more for me!!! Wicked I know but there has to be some compensation for enjoying fruits alone in this house, except when we have visitors. This is devine, and I am truely enjoying every last morsel *and* more prunes on the shopping list this week LOL. This recipe is the BEST way to keep healthy and regular so I will be making it regularly. Please see my rating system: with great taste being so easy, that's worth 5 stars any day of the week.
