  • Trim the winged edges from the carambola fruit and place in a saucepan.
  • Add water and boil until tender[approx 15 minutes].
  • Add the sugar, lemon juice and salt and boil until the jam sets.
  • Pour into sterilsed jars and seal.

  1. Do you leave whole or sliced? Mine are very big, why leave whole, is there a reason?
     
  2. Do you never mash the star fruit pieces up? You just have whole starfruits in your jam? Also, do they need a water bath after you put the lids on?
     
  3. I canned jam 6 months ago. One top popped off easily suggesting it wasn't sealed. Can I boil the jam again to make sure it is free of toxins?

  1. Starfruit is bland. I put a can of crushed pineapple in and it is better. Thicken it with a couple large spoons of cornstarch.
     
  2. It would be good to know how many jars of jam and what size jars are expected. This would make it easier to estimate when the jam "sets", which is a rather vague terminology.
     
  3. This recipe worked well and made a good quality jam. We don't eat this fruit and have a tree so it is great to be able to use them.
     
  4. Too loose. I think there was too much water added to the recipe. Next time I will use less. It gave me 7 half pints and 3/4 of an 8th. I had limes so I used them instead of lemon. I think this will be good as a jam. I think it will also be great as a base for a sauce for fish, chicken or pork. I may use it with rice and add some hot peppers and nuts. With a young star fruit tree, it is good to have another way to use this lovely fruit.
