This vegan Sticky Date Pudding tastes better than its traditional counterpart! Easy to make, totally delicious!
This is 'Oh My God' Good! And quick and simple. I can't use vegan butter or marj (I need very low Sat. fat) but I was able to modify it to be an amazing sticky date as good as any other. I drizzled a small amount of olive oil in place of the margarine for some moisture in the cake, and made the sauce to recipe but substituted the margarine for Soy milk. It didn't thicken (naturally) as much as a standard caramel sauce but I got it up to boil then off the heat which made it did thicken enough to become a sticky & luscious sauce. I did pour it over cake to help with any dryness and it was perfect!! Thank you for such a great recipe, I'll be showing this off and noone will ever suspect it's vegan!
Oh my god this was so amazing!!! It did not stay long in my house at all!! My dad who is the furthest thing from vegan claims its the best 'cake' he's ever eaten. Its got a lovely texture- very moist yet soft and fluffy- and the flavour of the dates and the spices really make it come alive. I agree with Sabavana- dont pour the sauce over the pudding- it makes the crust sickly sweet and ruins the texture of the pudding! Also, I only used about half of the sauce mixture- and it was PLENTY. This is hands down the best sticky date pudding ive ever tried- I would highly recommend pairing it with some soy icecream! I will be making this again for sure!
Absolutely delicious! My hubby was worried it would be too sweet, as he is generally not a fan of SDP because of this. But we both loved it, and it was so easy to make that I'll definitely be putting this on the table again. However, may I recommend NOT pouring all the sauce over the pudding (yes I know the instructions only say half, I thought I was being clever!) - it made it lovely and sticky, but a bit difficult to pick up to serve. I'm 17 and a vegan and have only just started to cook within the last 6 months; every cake and batch of cookies I have made has either been a disaster or had problems... this was SO easy to make and I didn't stuff it up!! What's even better is that it is to die for... so delicious!! A really easy recipe with great results! :D Thanks you!!
