White Chocolate Coconut Citrus Truffles

  • Combine coconut cream, white chocolate & citrus rinds in a microwave safe bowl.
  • Microwave uncovered on medium heat for 1 minute, stir.
  • Repeat process until chocolate has melted and mixture is smooth.
  • Cover & refrigerate for 4 hours or overnight.
  • Roll rounded teaspoons of mixture into balls, roll in coconut flakes & refrigerate until firm.

  1. very yummy! A nice change from most truffles. I wish I would have minced the peels after zesting for better flavor distribution. I also dipped these in white chocolate, then in coconut. This made them a little too sweet. The truffle was very firm, and I had to melt it in the microwave to roll it out. Loved it, though!

  4. Really good! And so easy. I wanted to try the the recipe before I made them for company, so I cut the recipe in 1/3 and the truffles turned out fine. I want to try dark chocolate too - next time. Great recipe Mandy!
     
  5. These are simply outstanding!! 20 stars, at least. And so easy to make. The balance of citrus and coconut is perfect. I sprinkled leftover finely grated lemon and lime rind over the serving dish. The next time I make these, I may mix more rinds into the coating coconut, for more color.

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
