ingredients
- 1 large zucchini, grated
- 2 carrots, washed, peeled and grated
- 1 onion, peeled and chopped
- 1 sweet potato, peeled and grated
- 1 bunch parsley, chopped
- 236.59 ml self-raising flour
- 236.59 ml grated low-fat cheese
- 5 eggs
- 118.29 ml olive oil
- salt and pepper
- 59.14 ml grated cheese
directions
- Place grated and chopped vegetables into a large basin together with flour and 2/3 cup grated cheese.
- Reserve 1/3 cup for top.
- Beat eggs until frothy with olive oil and add to bowl. Mix well and season with salt and pepper.
- Spread mixture over bottom of an oven proof dish, sprinkle reserved cheese on top.
- Bake in a preheated 350°F oven for 45 to 50 minutes.
- This slice is delicious served hot and accompanied by salad, or cold with hot vegetables for a snack meal.

Thank you for posting this recipe it has become a staple meal in our house. I have made it many times now, somtimes changing the veges around and it always works out great. I like to add bacon, sweetcorn and finely sliced red capsicum as well. Having a food processor really helps speed up the prep!!

Sage, the thought of grating onions made me want to cry to I also cheated and used the food processor. It did the job super quick and this was in the oven in now time at all. I have my own very similar recipe, not yet posted: but not the same, my finished product is a mixture little bit dryer than yours and maybe it's the way I've been used to eating this, but I prefer it ever so slightly my old way. Having said that, this is a wonderful recipe that I shared with friends and they came back for seconds, without a problem :) Please see my rating system, a wonderful 5 stars for an easy, quick and tasty way to eat veggies... even my fussy 17 month old had several spoonfuls :) Thanks !

I love to cook, read recipe books and food magazines,spend time in kitchen stores, grocery stores, gourmet shops, learning new cooking techniques, trying new kitchen gadgets,tasting exotic foods,enjoying a wonderful meal. I've always had a herb garden; now I have containers on my patio with my must have herbs. It seems, everything tastes better with fresh herbs!
